Box Mix Brownies for Comfort

We are still sad about the sudden death of Kit, who was my dream-guardian cat, so when his husband Jordan died of cancer yesterday, I knew we needed to do something easy and comforting.


It's simple to make box mix brownies vegan, and many box mixes are already made without animal ingredients.


We chose a mix that calls for two eggs. When baking, it works really well to do half of your egg substitutions as flax eggs and half as corn starch eggs.


Half of two is one. So we did one Tablespoon of finely ground flaxseed meal for one flax egg, and two Tablespoons of corn starch for the corn starch egg.


Each one also gets 3 Tablespoons of water. We have a coffee scoop that's just this size, and we use it just for measuring the water part of egg substitutes. I added that into the water the box asked for.


Also, I can highly recommend using extra virgin coconut oil for the oil and a little dribble of vanilla extract.


And just for extra fun, you can also do an experiment with your oil, vanilla, and water to see which substance is least dense, which is most dense, and which is in the middle. This really only works if you add the vanilla last, though.

P.S. a benefit of vegan baking is the batter never has raw egg to worry about! Yum!
